Summer hasn’t really got off the ground but it seems wrong to be tucking into traditional winter fare.
I recently tried out an M&S recipe for Tuscan-style sausage bake. This dish seemed to provide the best of summer (tomatoes, olives, fresh basil, peppers, butter beans) with winter weather comfort food (good old British bangers done casserole style).

I didn’t have any red wine vinegar to hand, so threw in some vin rouge instead. Yum!
